Go to settings > general > accessibility > display accommodations > invert colours > smart invert. You'll get sort of a dark mode

There is already a dark mode on iOS 12.1.4 it's called smart invert. I use it now on my xs.

iOS has had a dark mode for years, triple click to invert colours, pretty much a dark mode.

12.1.2 is not being signed and hasn’t been for awhile

Since the threadripper is a workstation grid processor I would recommend. With an RTX Titan instead of the RTX 2080 TI do you currently have as it has more Cuda cores and a higher clock speed out of the box and would give you much better performance in real-time scrubbing to 8K and 4K footage
